Ham & Veggie Cheesy Chowder
Not sure what to do with the leftover Christmas ham? Have you not been getting your veggies over the holidays? This easy chowder fixes those problems!
1 small sweet onion, chopped
1 15 ounce can cream corn
1 15 ounce can northern beans, drained
1 10 ounce can cream of mushroom soup
2 cups broth
1 cup halved baby carrots
3 cups cooked ham, cut up
1 12 ounce package frozen mixed veggies
1 cup heavy cream
2 cups sharp cheddar, shredded
1 1/2 tbsp cornstarch
In a slow cooker combine the onion, cream corn, beans, cream of mushroom soup, broth, carrots, and ham.
Cook on low setting about 4 hours.
Add the frozen mixed veggies, cream, cheese, and cornstarch. Stir well.
Continue cooking on low another 2 hours.
