This recipe is for an individual sized salad to make ahead for on the go. I use a square 1.5 liter Tupperware container and it is the perfect size for packing and eating from. I prefer balsamic vinaigrette but you could use other flavors or italian dressing too. 3 ounces of chicken is about half a breast.
2 tbsp balsamic vinaigrette
1 hard boiled egg, sliced
3 ounces chicken, cooked and chopped
1/2 avocado, sliced
1/8 cup blue cheese crumbles
1/4 cup cherry tomatoes
1 slice bacon, cooked and crumbled
3 cups packed mixed greens
In the Tupperware container, spread the vinaigrette evenly over the bottom.
Add the tomatoes then the blue cheese crumbles then the bacon crumbles.
Add the chicken, avocado, and egg.
Pack the mixed greens on top and securely close lid.
When ready to eat turn the container upside down and shake rigorously so the dressing evenly covers the greens. Enjoy!
