Blue Cheese Salad
This recipe is for an individual sized salad to make ahead for on the go. I use a square 1.5 liter Tupperware container and it is the perfect size for packing and eating from. 3 ounces of beef is about half a filet.
3 cups packed mixed greens
3 ounce filet mignon, sliced
1/4 cup cherry tomatoes
1/2 avocado, sliced
2 tbsp blue cheese dressing
In the Tupperware container, spread the dressing evenly across the bottom.
Add the tomatoes on top of the dressing.
Add the avocado and steak over the tomatoes.
Pack the greens on top and securely close lid.
When ready to eat, turn the container upside down and shake rigorously so the dressing thoroughly covers the greens. Enjoy!
