BBQ Bacon Cheddar Chicken

This simple recipe is perfect for a quick weeknight meal that the whole family will love! You can vary up the barbeque sauce used depending on the flavors you prefer. I chose a classic Stubbs sauce.
4 boneless, skinless chicken breasts
8 slices bacon, cooked crisp
6 ounces barbeque sauce
1 cup shredded sharp cheddar cheese
salt & pepper
Preheat oven to 350 degrees and grease an 11x14 casserole dish
Slice the chicken hasselback style making cuts across the chicken that go almost through it. Make the cuts a little less than an inch apart. An average chicken breast will have 5-6 cuts.
Alternate stuffing the cuts with cheese and bacon.
Place the chicken breasts into the casserole dish. Sprinkle with salt and pepper
Top with any remaining cheese and bacon then drizzle the barbeque sauce over the chicken.
Bake uncovered for about 30 minutes.
