Bacon and Mozzarella Stuffed Chicken

This simple baked chicken recipe is quick and easy and is packed full of flavor! You can make it ahead and keep in the refrigerator until ready to bake. For the mozzarella you can use shredded or block, whichever you prefer.
4 boneless, skinless chicken breasts
8 slices bacon, cooked crisp
8 ounces prepared pesto
4 ounces mozzarella
Preheat oven to 400 degrees
Slice the chicken breasts hasselback style. Slice almost through the chicken breast and make the cuts about an inch apart. About 6 cuts in an average chicken breast.
Alternate stuffing the cuts with mozzarella and bacon.
Place chicken breasts in a greased baking dish.
Top chicken breasts with pesto.
Bake for 25-30 uncovered until done.
